Regionality in the Adler Inn****s

Our eagle heart beats for honest tourism. From bread, oil, salt or jam to herbs, pasta and ice cream – everything is homemade by your hostess Anni Stock with a lot of love and creativity. All other food is sourced from the closest possible surroundings, from organic farming or from farms with fair processing methods.

So that you can see for yourself, we would like to communicate this:

All our bread and biscuits are baked by Anni Stock. Old recipes of the Tux farmers' wives are used, mixed with the modern bread culture. Of course you can also get gluten-free or low carb biscuits from us. You are also welcome to participate in a bread baking course with Anni Stock and take her secret recipes home with you.

Dairy products (cheese, milk, yoghurt, curd cheese, ...)

We buy our milk products from the Sennerei Zillertal in Mayrhofen. Together with the Zillertal mountain farmers, the family business focuses on transparent and regional cycles. The hay-milk farmers manage their farms & alpine pastures in harmony with nature.

Fish

No matter if trout filet, salmon trout or char - we get our fish from the fishery farm Schiefer from the Passeier valley. The fishery farm attaches great importance to the fact that the salmon is also purchased from Norwegian organic breeders. We get our alpine shrimps from Hall in Tyrol.

Fruit & vegetables

We only use seasonal fruit and vegetables from local farmers in Tyrol. The potatoes that you find on your plate in the evening, for example, are from Franz Kapeller from Mieming.

Cereal flour

Our grain flour comes from Bioquelle in Oberösterreich. Most of the grain is then ground in the Adler Inn in-house grain mill, as this is the only way to be able to guaranty gentle and natural processing. From bread to pasta - everything is produced with this flour in the resort in-house!

Herbs

We get our kitchen herbs mostly from our own herb garden. The wild herbs are collected by our expert herbalist Anni Stock mostly at higher locations (no fertilization is used here) and then processed. But you can also see for yourself here and take part in the informative herb hike with Anni Stock.

Schnaps

We buy our schnaps from the traditional distillery Erber in Brixental and from Christoph Kössler in Landeck. The noble brandies are mostly from the Stiegenhaushof in Zillertal, which also produces gin and rum, these are of course also available at our Franzibar.

At breakfast you will find freshly pressed fruit juices made from seasonal fruit from local farmers in Tyrol. All other fruit juices are purchased from Grapos from Lannach in Austria.
